Prepare the sponge cake Prepare the cake by mixing all the ingredients in a food processor.
Remove the sponge from the processor and set aside to cool for 15 minutes.
Set aside the cake for a few minutes to set up the sponge.
Make the sponge filling Prepare the filling by mixing the sponge in a small bowl.
Once the sponge is fully mixed in, pour it into a large bowl.
Use a pastry brush to coat the sponge with the filling.
Repeat until all the sponge pieces are covered in the filling, and all the pieces are moistened.
Cover the sponge and chill for 5 minutes.
Cover and chill again for 5 more minutes.
Prepare sponge cake Remove the cake from the refrigerator, cover, and chill.
Cook sponge cake in a preheated 375 degree oven for about 5 minutes, until the edges start to brown.
When ready to serve, drizzle the sponge mixture over the top of the sponge, and sprinkle with fresh mint. Enjoy!
