I grew up with a soft-serve fountain drink called “the buffalo sponge,” which was the most popular thing to drink out of my childhood.
I’d eat it every day, and then one day, the sponge had become so soft and chewy that it almost tasted like a potato.
I’ve never been able to find an authentic buffalo sponge recipe, so I started to research how to make my own, and soon I had the recipe for a homemade buffalo sponge.
It’s the perfect recipe for those times when you’re craving something a little bit different and something you’ve never tried before.
What you’ll need for the recipe:1 pound sweet potatoes, peeled and cut into cubes1/2 cup brown sugar1/4 cup baking powder1/3 cup baking soda1 teaspoon cinnamon2 cups all-purpose flour1 teaspoon salt1/8 teaspoon baking powder3/4 teaspoon baking soda3/8 cup milk1/1 teaspoon baking spray1 teaspoon vanilla 1 cup chopped fresh parsley, plus 1/4 tsp for garnishFor the topping:2 large eggs1 teaspoon lemon juice1/6 cup chopped mint1 teaspoon ground cinnamon1/16 teaspoon ground ginger2 tablespoons all-natural buffalo sauce, such as T-Bones Buffalo Sauce, to tasteFor the filling:1 cup powdered sugar1 teaspoon crushed red pepper flakesFor the sprinkles:1/7 cup chopped parsleyFor the garnish:1 teaspoon freshly ground black pepper1/12 teaspoon ground cloves1/10 teaspoon ground allspice1/30 cup chopped raw red onionFor the drizzle:1 tablespoon powdered sugar2 tablespoons water1 teaspoon chili powder1 tablespoon soy sauce2 tablespoons vinegar1 tablespoon honeyFor the sauce:1.
Preheat oven to 350 degrees.2.
Combine sweet potatoes and brown sugar in a large bowl.3.
Add the baking powder, baking soda, and cinnamon.4.
Mix until combined.5.
Add in the baking soda and baking powder mixture.6.
Add salt and baking soda.7.
Add milk and mix until incorporated.8.
Add powdered sugar, salt, and baking mix.9.
Add water and mix.10.
Add chili powder, soy sauce, vinegar, and honey.11.
Pour into a saucepan.12.
Cook on low for 12-15 minutes.13.
Add chopped parsleys and stir to combine.14.
Add mint, ginger, and ground spices to the sauce and stir until fragrant.15.
